Trading crypto pay capital gains tax

After reading a lot of posts here, I'm left wondering why this has to be so convoluted... Why couldn't you just chalk all your crypto gains up to trading profits,pay the tax man his cut and call it a day?

All this cash business stuff seems ridiculous and looks like some people have watched Breaking Bad a few too many times.

Please, feel free to educate me on why I'm wrong.
